It's kinda hard to believe the busy wedding peak season is over. It's funny how I spend most of the year working and happily designing with my couples and then it feels like the wedding passes in a flash. Though I'm happy to complete their edible masterpieces, it kinda feels like graduation where I'm happy for them and wish the best for their future. However I also feel like I'll miss working with them and not sure when or if I'll see them again. One of the couples that I'll surely miss but will cherish that I got to be apart of their wedding day was Nick and John. Thank you to Tied Photography for sharing some of their photo's of a couple that I loved working with so much . If you missed this previous post about their cake, the loving pair said their 'I do's" in style at the Ontario Heritage centre in downtown Toronto. Because of getting engaged at the Eiffel Tower, Jessica the bride wanted to celebrate that moment with her wedding cake being an elegent version of the effiel tower. I've had a mission to make a very decadent cupcake for quite awhile now. So when Toronto Life Magazine asked me to design them a Caketress cupcake I knew this give me a reason to. This three layer Belgium chocolate cupcake (a layer of flourless chocolate cake, layer of rich chocolate brownie and with Godiva white chocolate mascarpone mousse) was decorated with white chocolate textured ruffles painted with 24 k gold and wrapped in a custom golden wrapper . Bon appetite!

Food Network Cake Challenge

I've been busy keeping a little secret. I've been preparing myself for one of the best opportunities a cake designer can ever have. I'm packing my bags to compete in a Food Network Challenge. This is a huge dream of mine and I can't express how thrilled and grateful I am for being chosen. It's hard to believe looking back from when I first started decorating cakes (and had no idea what I was doing), I would watch these challenges and be amazed at the possibilities and many art forms of cake. I worked so hard to get at where I am now in my life and it really makes me believe even more how anything is possible (as sappy as that sounds.) This is all I can really share for now and I will of course keep you posted on air dates when I know. Since it seems wrong for me to blog without a cake, I'm going to share a cake I'm slightly embarrassed to share but also makes me happy to see how far I've come.

This was my FIRST wedding cake I did years ago. I had been asked by a head chef of a local hotel in Owen Sound, Ontario to make a wedding cake for a couple traveling from Washington. They were a funky couple who wanted a topsy turvy, lego themed wedding cake. I had no experience with fondant, topsy turvy cake structures or even how to dowel a cake. So I literally bought every advanced cake book I could find to figure out how on earth I would pull this off. I remember having nightmares and anxiety attacks of me ruining this sweet couple's cake practically everyday for three months leading to the wedding. However despite my inexperience I studied and executed this colorful funky wedding cake. I believe it was a chocolate fudge cake with raspberry swiss meringue butter cream icing. After I completed it , I knew this was what I wanted to do and strive for in a career.

It's my favorite time of year again (and no I'm not just meaning Christmas). The Magazine racks are beginning to fill up with the newest bridal magazines and show off the latest trends in the fabulous wedding world. For Weddingbells Magazine, I was fortunate to work on pastel cake centerpiece spread. Here I was asked to designed with the talented Christine Flynn of Love the Design (she designed the lovely stationary toppers) for these four pretty cake centerpieces .

I was also thrilled to hear that one of the weddings I worked on in July 2010 was also featured in the real wedding section. It wasn't just any wedding , Jasmine and David's Royal York wedding. It's nice to see the extravagant 5 foot wedding cake I designed for them in print with the lovely and memorable couple. It also made me happy to read what the couple said about their cake.

“We were thrilled with Lori’s cake, which was not only stunning to look at but delicious, too. She is also so sweet to work with,” the two share. “About three weeks before the wedding, we were still ‘cake plotting,’ and we increasedour cake budget to make it even more grand.”

When I met with winter bride Sandra , we both found ourselves knee deep in smiles and excitement as we designed her winter couture wedding cake. Every couple I meet have their own style and unique touches to decorating their reception. For Stasia and Robert, they had a touch of whimsy and crafty touches with birds on limbs for their centerpieces. I loved that for their wedding the had several shades of color that made the room feel quite simply happy. So for their cake we went with this charming design of a carved birdcage top tier and rows of colorful buttons and frill trims. Two gold birds were later added when the cake was safely delivered. No other part of the wedding expresses the bride's style quite like the couture gown she chooses wears. I enjoy taking inspiration for their wedding cake by her fashionable choice. As fashion will always evolve, so will the cake designs I do that expresses a touch of the bride's personal style.

For this fashionable bride, Lisa, she wore a gorgeous ruffle ball gown with a jewelled waist. I incorporated the unique ruffles into the cakes with sparkly edible pearls clustered into the design. Lisa also wantsd a touch of Audrey Hepburn. So I designed these edible lockets with hand painted iconic Audrey Hepburn silhouettes. The topper was a hand made edible feather fascinator to top off this couture cake with style. Instead of decorating , I just accessorized this cookies and cream, and chocolate smore wedding cake.

I do love the challenge of designing and decorating an over the top large detailed masterpiece of a wedding cake but sometimes elegant and simple is just as enjoyable. For this country bride I wanted the wedding cake to suit her simplistic and beautiful wedding reception. So we went with a three tier cake with two round layers and one petal shaped tier and covered the trim in hand made white fondant doilies. The green edible gumpaste ranunculas and black and white anemone flowers gave the pop of elegant detail to this country inspired wedding cake design and I love how gorgeous it turned out.

Right away I knew I wanted to create a set of vintage camera with edible images of Beth scattered around. This made the vanilla cake both different and personalized to the special birthday lady.

Believe it or not I rarely see a cake cutting in person or even the couple enjoying their cake. Unlike most vendors in a wedding , the cake designer delivers a cake behind the scenes , and disappears before the guests arrive. So the last time I see the cake, it's completely finished and perfectly staged where it was intended to be. However as much as I like the perfect memory of the finished cake, it must get destroyed to be savoured and it's probably best that most cake designers are not their to see their works of art cut into. Cake knives just might go mysteriously missing if we were to attend. I'm just kidding.

I was thrilled to see an email in my inbox from the talented Erika and Ryan of Rowell Photography labelled "Lisa and Greg" . I really do enjoy seeing the candid moments of the cake cutting and loved how Lisa and Greg's fun and colorful personalities were captured enjoying their pumpkin wedding cake at the Capitol Event Theatre . Palais Royale Ballroom Wedding | Savoir Flare | Downtown Toronto Wedding

Yes a wedding cake should be as custom and unique as the couple. This also applies to the flavor. I really enjoy making the cake's flavor custom to the couple as well. For Jennifer and Mani's Palais Royale Ballroom wedding , we went with a "Grasshopper" cake. What is a Grasshopper? Well it's a shout out to a classic drink : Chocolate cake with a hint of Creme de Cacao, Creme de menthe buttercream and layered with Belgian chocolate ganache. An additional plus for this cake is when cutting into the cake it matched their color scheme for their wedding decor. It's those little details that really show that a lot of thought was put into the wedding cake.

As far as the design, I was inspired by this hip couple's invitations and as well as their theme. They went with an eco chic inspired wedding decor designed and planned by Savoir Flare. The climbing chocolate branches with sugar magnolias and little hummingbirds were incorporated from the invitations and the cake's unique shape chosen by the couple. Believe it or not, this is just a sneak peak for this wedding's sweet touch. Looking forward to sharing the the cake with the sweet table of cupcakes , meringues and Persian pastries soon.

I really enjoy how fun and excited my couples get during the wedding planning process. When I met with Cheryl for her cake tasting / design consultation, right off the bat we were having fun planning her nautical inspired cake for her wedding at Palais Royale Ballroom planned by Whitney at Bliss Events. The blue and white nautical inspiration didn't come from her beautiful waterfront Toronto venue , but her soon to be husband's career as an engineer. Since he wasn't there when planning the chocolate rum wedding cake, she had left it a surprise to add touches like propellers and anchor charms on a silver sugar chain hanging from striped fondant ruffles and topped with a soft white sugar flower.

Capitol Event Theatre Wedding | Distinct Occasions | Younge Street Wedding Cakes

Yes the beautiful satin white wedding cake has it's place in elegant wedding cake designs, but it's not for everyone. Being that I make custom designs that suit each couple's personality, Lisa and Greg, the bride and groom, were not the average couple. They loved bright colours so much that they used it to celebrate their wedding day at the Capitol Event Theatre on Yonge Street in Toronto. They also had a unique theme of Hawaiian eclectic for their wedding decor, planned and coordinated by Crystal Adair Benning of Distinct Occasions. They really wanted a sassy cake that was nontraditional and had tropical flair for this pumpkin layer cake with vanilla bean butter cream and dulce de leche. This may be a common theme for cakes in warmer parts of the world, but in Toronto not many couples come to me with such a fun and wild theme. So in a way this cake was like a vacation for me.

The base of this vibrant cake was airbrushed with a fading bright pink to orange and then painted with silver polka dots. The mixture of tropical flowers including the large pink sugar hibiscus complimented with the bamboo gave the right touch of the tropics. For those of you who love interesting and colorful cakes, you should check out the amazing talents of Rick Reichart of Cake Lava from Hawaii.

Destination weddings are very popular for weddings these days and it's not that uncommon for me to design the cake through calls and emails for these couples. For Lindsay and Steve they spent the majority of their wedding planning in the states for their Muskoka wedding at Deerhurst Resort in Huntsville decorated by Eventdecorator.com . For the design, Lindsay wanted an elegant and timeless wedding cake with hints of deep purple and glittery broaches. Cream sugar lace wrapped the base of this banana and chocolate layer cake.

Hexagon Pink Stargazer Wedding Cakes | Toronto Cake Shop GTA

Wedding cakes truly come in all shapes and sizes. There are several shapes of pans such as petal , hexagon, round, octagon, oval, square, and of course some of us cake designers take it a step further by carving the cake into a unique shape. I personally love mixing and matching the shapes as well as playing with the heights of the cake to give structural dimension . For this three tier wedding cake, we went with a six sided hexagon with two different heights. The middle focal point was on the sugar stargazer lilies and the cascading flowers of Teresa and Daryl's chocolate fudge cake with Belgian chocolate ganache and dulce de leche filling.

Lately I've been asked why I don't always use cake toppers. Even though it is traditional and works beautifully with some cakes, I don't think a cake topper is suitable for every design. When designing I like to play with the balance and focal points of the cake and since this cake's focal point was on it's front and center, a cake topper would only unbalance that and take away from it. Another thing I love to do when decorating is add texture and layers to the cake's surface. In this cake, random embossed lines and scattered candied pearls made a sweet backdrop canvas.

Toronto Luxury Mini Cakes | Vintage Perfume bottles | Cake boutique

Even small and intimate events can still have a hint sweet luxury. Miniature cakes that are served and presented to each guest adds huge wow factor to any event. For this intimate affair I designed and recreated vintage perfume bottles out of banana cake. I've said it before , mini cakes are the most labor intensive form of cake, but when you think about combining the favour and cake budget it's worth work that goes into these little unique gems.

Richmond Hill Wedding Cake at Eagles Nest Golf Club

I can't believe it's already August. The summer has gone by so quick and I am so happy for all of the July couples who said their vows this month. One my July bride's was Laila. She contacted me to design a sparkly white and purple cake for her wedding reception held at Eagles Nest Golf Club in Richmond Hill. Right away when I met her, I knew she loved her gorgeous rouched and pleated gown, glittering jewels and damask pattern. I incorporated what she loved into a five tier Vanilla Bean layer cake with raspberry buttercream and fresh berries. The topper was an edible birdcage veil with ruffles and hint of sugar gems. These days wedding cakes come in all flavors, shapes and forms. Each one I design is meant to be as unique as it's extravagant affair is is to be showcased at. For Samantha and Scott's wedding cake , they allowed me to be a little more out of the box and different with their banana split cake. Their outdoor Newmarket wedding was a mix of circus, vintage, and shabby chic fun and I knew they wouldn't just want a simple three tier cake. Instead we went with a trio of wedding cakes that were carved into the shape of antique style birdcages. The background of the cages were hand painted similar to their wedding invitation (with a few birds added ). Enjoy!

It's not often I get a couple asking me for a traditional styled wedding cake, but I do enjoy the variety when designing a season of cakes. This three tier banana split cake was served for an intimate back yard wedding on the water. It's funny, I used to avoid pink for the longest time , but this year I'm loving pink for pretty wedding cakes. A sugar flower bouquet filled the top on the quilted fondant wedding cake. Cheers!

The wedding cake is more than just a traditional wedding dessert. It's the ultimate centerpiece to the reception's decor where both side of the wedding can come together in awe of it's edible artwork.

For Jasmine and David's Royal York wedding in downtown Toronto, they wanted the cake to be the first thing you see when you walked into the Imperial Ballroom. Their decor, planned and designed by the talented Cynthia Martyn of Cynthia Martyn Events , made it exciting and easy to find inspiration for the cake design. Jasmine had a good sense for what she wanted. The cake had to be at least 5 tiers tall, vintage inspired, purple and gold, interesting fence like topper, and to accentuate her beautiful wedding decor of roses and orchids. I had so much with Jasmine when designing this wedding cake, mainly because we both would get excited and dream up more ways to make her cake luxurious. Over time with our cake plotting and dreaming, it grew, added more flowers and golden lace trim, a grooms cake was added for their brunch, and the cake became more detailed and elegant with 24k gold scrolls to blend with the topper. Her style as a fabulous bride and mine as a cake designer blended in creating this edible masterpiece and the results has made it one of my favorite cakes I've designed to date.

Another aspect that excited me for this wedding was who they had chosen for their wedding photographers, Dave and Charlotte Photography. With knowing how glamorous they shoot weddings, I had to use their photos when capturing this large wedding cake. As a cake designer, with it being a busy and extremely labour intensive job,I don't usually ever get to see the cake cutting or the couple enjoying their cake. So when I saw these gorgeous images, I was so thrilled (almost cried) to see Jasmine and David (one of my favourite couples) cut their dream cake I designed for them. It's pictures like these that remind me why I work to long and hard on an art form that must be destroyed to be savoured. Thank you again Dave and Char for sharing these!

It's almost always that I use smooth fondant for decorating wedding cakes because the artistic possibilities are endless. Christy the bride , however loved the look of rustic rolled white chocolate for her golden wedding cake to be served up north at Taboo Resort. This four tier oval golden cake needed to match the old world feel to her wedding decor , crafted by Muskoka's leading decor team , Eventdecorator.com. Filled with raspberries and white chocolate ganache, this cake screamed decadence. Handed made sugar flowers, each uniquely painted in actual gold finished this beautiful and delicious cake.

Pink and Coral Blossom and Hydrangea Wedding Cake | The Rosseau Marriot Wedding Cake

This pink and coral elegant designer wedding cake made it's way up north for a reception at one of my favorite Muskoka venue's for nothern weddings , The Rosseau. The rich flavour of this three tier square cake was an Opera Cake (top two) and the bottom was a Lemon Cake. Both favourites of the Bride and Groom. The delicate piping was based on the lovely invitations the bride had choosen, and the falling pink blossoms and coral hydrangeas gave the right pop of colour for their elegant affair up north.

Wow what a week it was. It was a fun packed week of designing wedding cakes. One them was Meghan and Rob's contemporary deep purple and apple green wedding cake. This three tier square cake covered pleated stripes and sugar flowers, was made to flavor one of their favourite sweet treats , a peppermint patty. A fun flavour for this very fun couple.

Apple green roses and deep purple hydrangea complimented the textured fondant stripes to this chocolate mint wedding cake.

Amy Atlas is the queen when it comes to styling and designing Dessert and Sweet tables. When I was offered the opportunity to contribute to her popular dessert blog, I could not refuse. I've designed many cakes, but with this being my first sweet table , I wanted it to be still scream "Caketress". Fashion plays a huge roll in a lot of my designs. Mainly because I used to dream of being a fashion designer, and though it didn't pan out for me, I like to combine my two dream careers to make edible fashions that represents my couples personal style. So with out a doubt I knew my very first sweet table would have hints of couture.

I enlisted the help of Cindy Johnson of Platinum Events Group to do her magic on styling and Taylor Jackson Photography to capture my couture sweet table. Cindy and I agreed the look should be soft with greys and whites to make it look almost dreamy. A perfect palette for an elegant winter wedding in which I would love to do again. However our choice of color palette made it a challenge to find uncolorful candy. So with scouting the city neutral candy and creating lace frill cupcakes, lavender meringue ruffles and french macaroons by Enchanted Sweets , the color palette turn pulled through beautifully. Our lovely model bride wore Vera Wang gown and had a Fuscia Designs floral bouquet as precious arm candy. The soft and feminine calligraphy by Calligraphy by Diane gave the finished look to this fabulous team creative. Check out the feature on the Amy Atlas Blog.

A trio of grey and white wedding cakes addorned with lace and ruffles made a starting point to this designed dessert table.

I wanted to stay away from the expected plateaus and stands for the some of the malted chocolate pearls, rock sugar crystals, pumpkin cupcakes and French macaroons. Instead I placed them in jewelry boxes to tie in with the chic dressed look.Love the glittery broach on on the bouquet!

Forgot how much fun making meringues can be.

Toronto Mini Wedding Cake Designer

Miniature cakes are by far the most luxurious way to wow your guests with cake. Though they look simple and elegant they the most labour intensive forms of wedding cake. Lisa, the lovely bride who just wed last weekend on Georgian Bay's waterfront at the Bear Estates, met with me two years ago regarding her miniature chocolate wedding cakes. Knowing that her wedding was on a long weekend, booking ahead was key in order to get her 130 two tier mini cakes for her guests. The chocolate strawberry truffle cakes were covered in chocolate fondant and decorated with green hydrangea sugar flowers and then packaged with a gold monogram wax seal.

The bride and groom took the time to hand out each mini cake individually to their guests as there way to say a sweet thank you. How cute!

Here's a cake a I did last weekend for a gorgeous couple. The bride had great taste and wore a gorgeous jewelled belted gown, so we incorporated it into the chocolate truffle cake as the main sparkly focal point. The cake was hand sculpted to replicate the pleating and gathering of the dress and painted with an edible pearl dust. The guests were served with cupcakes with purple sugar hydrangeas on top and wraped with a silver demask wrapper as both a delicious banana treat and as a favor. Congrats Tom and Kylee on your union!

One of my favourite parts of working in the wedding industry is meeting other creative and talented people. Each wedding the vendors are almost like a family of creative minds working together to create the couples dream day. I enjoy working with wedding planners, floral designers, stationary designers and any other creative mind in the wedding planning process. Often their work is incorporated into the cake design because what they do is also so inspiring.

A couple of weeks ago Cynthia Martyn contacted me to design a cake for her wedding inspiration shoot to be showcased on the queen of all bridal blogs, Style me Pretty. I was thrilled for many reasons for this project , one of which was who was capturing the photographs, the talented Rebecca Wood. Rebecca captures weddings in such a soft and beautiful happy way and was the perfect match for this girly pink and peach inspiration design shoot.

For the design of the cake , I wanted to make it soft and cheery. So I incorparted several shades of pink and peach sugar pom poms. To give the vintage touch to the cake I created edible gold vintage keys and buttons (I know I'm obsessed). The main focal point of the cake was the fabric inspired large sugar flower which was hand painted with crafty touches.

Stemz flowers designed the gorgeous floral arrangement. The peonies, roses and bougainvillea smelled amazing. f

Cynthia found these adorable pattern soaps which complimented the custom designed menu made by Christine Flynn from Love the Design.

Toronto Wedding Cupcakes and Cake

Cupcakes have been popular with wedding for about a decade now and aren't going anytime soon. They're playful, fun and makes you feel like a kid again when unfolding it's wrapper and munching on it's mountain top of icing. For this couple's wedding held at Lora Bay Golf Club in Thornbury, they wanted elegant cupcakes with blue sugar hydrangeas. I believe cupcakes can be as elegant as traditional wedding cake by adding a silver demask wrapper around these pumpkin and chocolate cupcakes. The pattern was then hand painted with silver onto the couple's cutting cake. Enjoy!

Liberty Grand Wedding Cake

Samra and Sam's golden wedding held at the Liberty Grand this past Sunday was filled with elegance. For the cake we wanted to in corporate vintage feel of the venue with shades of gold and vintage charm . So touches of antique sugar buttons , golden sugar peony and the dramatic vintage trim cover base was the vision for the design. As a special request, I was asked to make french macaroons hand painted with 24K gold which sat in front of each guest. Once again the decor and florals of this wedding were beautifully crafted by Tamara and Kevin of Fuscia Designs. The overall appearance of the wedding looked stunning.

Markham Wedding Cake | Crystal Fountain Banquet Hall | Toronto Wedding

Majority of the time the bride is usually the one contacting me in regards to the wedding cake. However for this cake, Nick the groom was the one excited to contact me to plan out the cake to make his bride Jules happy. When first meeting this couple for their cake consultation, all three of us were getting thrilled for their antique style wedding cake. Right away when browsing my portfolio Julia fell in love with one of my past cake display designs for their Crystal Fountain Banquet Hall wedding . Normally I don't repeat or take inspiration from a past cake design, because I want each cake I design for each couple to be made only for them and no one else. However this past design was a cake display, and we added a few greek touches to personalize it to make it Nick and Julia's four tier banana split wedding cake.

Purple Wedding Cake Hat | The Great Gatsby | The Hart House Toronto | Cynthia Martyn Events

Wow 2010 wedding season has begun it full force and I really can't wait to execute all of the designs I have been sketching up over the last 12 months and even further back. This past weekend I finished this cake beauty and also another year went by on the age clock for me. It made me realize that I have been making cakes for 7 years now. However I really think I've came into my own this past year as a cake designer. I have my own style and way I approach sugar art and lovely couples who not only want my designs for their wedding cake, but who inspire me in my mission to create cakes that reflect the couple's style and not just another trend. For me , trends come and go, and I want each cake I make to be meant for the couple and be forever memorable as their cake alone.

So this past weekend the lovely Vivian and Eugene said the vows at The Hart House in downtown Toronto. Their stylish Great Gatsby inspired reception was planned by the reputable Cynthia Martyn and decorated by Tamara and Kevin of Fuscia Designs. Being that I book up in advance, I normally can't take last minute orders but luckily I was able to fit this cake in. This three tier purple and black cake with edible birdcage veil, was in need of a hat, a stylish hat. Once again I find myself not necessarily "decorating" but dressing and styling this cake to be fit to be showcased at this couples elegant affair.

The Cake Show Toronto | Wychwood Barns | Bonnie Gordon Cake School

Last week I definatley enjoyed being a judge at The Cake Show held by the Bonnie Gordon School of Cake design. The entries for the Wedding Cake Competition and the Celebration Cake Competition were incredible. I was also amazed on how packed it was with cake lovers and tasters. Which was good considering that a porton of the proceeds go to The Stop. Congrats to Bonnie Gordon and her team for another amazing show and I look forward to it next year.     This week has been a fun packed busy week for me. First I taught two more classes at the Bonnie Gordon Cake School here in Toronto (Haute Couture Class and Painting on Cakes). Second, I had the opportunity to be apart of The Cake Show today as a guest speaker, and third I got to design a lovely cake for Weddingbells Magazine's 25th Anniversary party, held at the Windsor Arms Hotel. The party showcased 25 of Toronto's talented cake designers (all who trained under the Bonnie Gordon School), and I felt fortunate to be amongst such a creative group.
   For this design I wanted to showcase how I design wedding cakes. So a dash of vintage, a hint couture, and of course some bling was my recipe for this pink and peach cake design.
   To finish such a great week I will be a Judge (yes , not competing, judging) at the main event of The Cake Show tomorrow at the Wychwood Barns . The event is open to the public and an affair of all cake affairs and I highly recommend stopping by to view and TASTE some of the best cakes Toronto and Ontario has to offer. The wedding color palette tends be one of the first decisions a bride make when designing her wedding. Every year there tends to be trends of popular shades, but this year I'm loving the vast color palettes my couples are bringing to their cake consultations. One color that seems to stand out more then once this year is purple. It's funny how one year a color can be out and then back in , in a new way. Here's a wedding cake design I did last year with several shades of purple fondant ruffles on a neutral grey base with hints of silver.

Mini cakes will not be going out of style any time soon. It is a luxury and a grand statement to have an individually designed miniature cake served to each of your guests. I designed these birch mini cakes for a last minute request for Muskoka decor and design extraodinaire Elizabeth Johnston of Eventdecorator.com. She participlated in a table theme challenge at the Canadian Special Events Expo held at the Metro Toronto Convention Center this past Thursdays, and was no surprise she placed first. Her themed "Spirit of Nature" table was a gorgeously layered masterpiece with Native flair. Congrats to Elizabeth for her winning design!

Neha & Jeremy's Capitol Event Theatre Wedding Cake

2010 has brought about many new trends and untraditional ways to serve cake to guests. From cake lolli pops to cake kabobs and even gorgeous bouquets of cupcakes for the couples who want a fresh spin on their wedding cake. For Neha and Jermey's Valentine's day eve wedding held at the Capitol Event Theatre , they were very excited for the idea of cupcake bouquets serving almost 200 of their guests. So four large pink feathery bouquets held their banana and chocolate fudge cupcakes with a small one tier cake for cutting. The reception's silver and fuschia decor was gorgeously planned by Crystal Adair -Benning of Distinct Occasions.

Couture Cakes Class - Bonnie Gordon School of Cake Design

It's been a year of a few new ventures. One of which is I've began teaching my own classes at the prestigious Bonnie Gordon School of Cake Design. I'm a big fan of the school, mainly because Bonnie Gordon was the first and most influential person I've learned from in the early stages of my passion of cake design. Students are not just taught several skills and techniques but they are pushed to be creative and find their own style as a cake designer/hobbiest.
My first class, Haute Couture Cakes, was held in early March and the students did an excellent job taking inspiration from current trends on the runway and creating edible couture. Cake Style Inspiration: Betty Paige | Cheetah Print and Red Wedding Cake

I enjoy taking inspiration from style icons. In this case, as part of the 2010 Collection, Betty Paige played a huge influence for this design. To play into the pin up style , I hand painted the cake with cheetah print and included flirty touches such as fish net and ruffled red fondant. All in all I wanted this cake to be stylish with a touch of flirty.

Wedding co. show at The Carlu

As previously announced, The Caketress' cakes made their first appearance at The Wedding co. show held at the Carlu. It was great to see so many new and familiar faces in the wedding industry and so many current brides stop by my booth. All in all it was a great show and look forward to doing it again next year.

With it being show time, I felt the urge to design a few new cake displays to show what can be done with cake. This hand painted pin stripe cake was adorned with 24k painted sugar jewels. The soft shades of pink ruffles gave the right touch of flirtiness to contrast the black and white.

Vintage Gown Inspired Wedding Cakes | Cabaret Queen Street | Toronto Weddings | Rowell Photography

I really can't turn off the design side of my brain especially when shopping. So when I walked into one of my new favourite store's, Cabaret Vintage and was in awe of the one of kind vintage clothing and vintage inspired bridal line, I really couldn't help but feel inspired . The owner of this fabulous store asked me if I would be interested in creating a window display cake, and of course I was more then thrilled to come up with two cake design concepts.

Hanging on the wall was a gorgeous vintage replicated and cleverly pillowed tailored dress known as the "Truffle" dress. Instantly I was debating how to recreate the dress's unique tailoring into a an edible design concept. For the second design, I replicated the detailed embroidery and pleats of a this 1960's glamour inspired dress.

I really couldn't help but want to capture this fashionable collaboration in a editorial style shoot and was thrilled to have had the talents of Erika and Ryan, of Rowell Photography work their fierce skills.

When it comes to over the top Muskoka weddings and events, Elizabeth Johnston's from EventDecorator.com name usually follows. Last spring I was asked if I would like to design mini cakes for them for a creative shoot with one of my favorite photographer duos, Ryan and Erika from ROWELL Photography. Mini cakes are one the most extravagant forms of presenting the wedding cake to guests. I wanted to make the mini cakes glamorous with a touch of old world charm, decorating them with vintage buttons and edible feathers, (don't expect my obsession for antique buttons and feathers to go away anytime soon.) The two similar but different mini cakes made a nice touch and complimented the gorgeous florals and table decor that EventDecorator.com is known for.

Wedluxe Wedding Cake | Ralph Lauren Wedding Cake | Palais Royale Cake

It's around that time, being near to the the end of the year, where I look back and feel blessed. I've had the pleasure to work with some pretty amazing couples this year and also enjoyed a few creative projects along the way. So when I was asked to design a cake for a Ralph Lauren Inspired Wedding spread in the new issue of Wedluxe Magazine - The Designer Issue, planned by Cindy Johnson of Platinum Events Group, I was more then thrilled.
It's no secret that I highly enjoy taking inspiration from fashion and creating edible couture. Therefore I took designing an inspired cake fit for Ralph Lauren and Wedluxe very seriously. I researched one of his passed runway collections where I found skirts and dress with layers of textured ruffles, stripes, feathered head pieces and of course preppy Hampton's style influences. I wanted to capture Ralph Lauren's minimalist detailed structured style while complimenting the entire look of the editorial feature.

This is just a peak of the Ralph Lauren inspired feature. I highly recommend checking out the entire spread in Wedluxe now on stands and also the other talented people involved. It was one enjoyable team effort with some amazing and reputable wedding industry super stars.

This past Friday I had the honor to attend the Canadian Wedding Awards where I was presented with the "Cake Designer of the Year Award" based on past work. Since the event was presented by Wedluxe magazine, the winners were handed out a copy of the newest issue hitting stands in a few weeks. The new issue is absolutely gorgeous and filled with tons of inspiration for those brides who enjoy all the refined details for their wedding.

Sequins Toronto Birthday Cake | Wedding DJ | Pink Silver Birthday Cakes

These past few weeks have certainly been busy and exciting, with meeting and designing for some amazing 2010 couples. Next year's collection of cakes are getting to be more over the top and I really can't wait to get to execute each masterpiece. I was also thrilled when one of my favourite superstar wedding DJs, Lisa Ng of Hello DJ, asked me to help celebrate her birthday with a custom confection. For the cake, all that was asked was it be "girly" and chocolate , so I added a little touch couture sparkle with a pink and silver sequined cover cake. Happy Birthday Lisa!

Silver Cuban Inspired Wedding Cake | Toronto Wedding Cakes

This week I have to say , I love my career as wedding cake designer. Sure it may be not the most glamorous job in the world, being most of the time covered in sugar and working endless on tight deadlines, to create something unique that in the end must be destroyed to be savoured. What made this week so enjoyable, was having a client that trusted my design esthetic to create this silver Cuban inspired wedding cake. With Cuba being the location of their first wedding last week, the couple wanted to include touches of it to the decor for their second reception. The concept was planned months in advance, but the actual execution, like most great designs was constantly evolving and left completely up to me. To create a Cuban inspired look , I wanted to incorporate the beautiful tropical sugar florals , sparkling white sand, and a touch of modernism influenced by Cuban art.

Ruban Rose et Chocolat | Four Tier Chocolate & Pink Wedding Cake | Muskoka, Ontario Wedding Cake

When it comes to cake proportion , I prefer designing each cake tier to be smaller in width but with twice the height to make it greatly statuesque. As well the cake is quite appealing as it is cut and served to reveal several decadent layers. For this cake, it is the soft shade of pink against the neutral shade of chocolate brown that makes it charming. This four tier cake was designed to be delicate and fine with quilted chocolate fondant with pink pearls and bows. Enjoy!

Mexican themed Wedding Cake | Cranberry Resort | Hand painted Cakes

I know I've said it before , but I highly enjoy designing cakes for themed weddings. For this cake concept, it was all about my client's favorite pastimes in Mexico together. Color was a definite must to pull off the design , so I incorporated dozens of hand painted sugar tiles wrapped around all three tiers. Pink shades on sugar Bougain Villa were added to give just the right touch of Mexican florals to make this cake both colourful and refined.

Sweet Bling | Purple and Jewelled Cupcakes | Shopping Bag Cake

Who doesn't like a little bling! These cupcakes were the edible accessory at the grand opening of Style Studio's sister store Hey Girlfriend. When asked to cater to this event , I was more then thrilled to design some sweet treats for one of my favorite new store. Being an evening cocktail style event, sugar jewell adorned cupcakes were the perfect choice as guest could nibble and shop at their hearts content. This time of year is the best when it comes to the outdoor beauty of the Blue Mountains while the leaves change color. It's no wonder this couple got married outside at a horse farm and the reception in the an actual barn. For the design of the cake , we match the custom made stationary by painting on a climbing branch silhouette with falling sugar leaves while adding golden twigs in the background.

It seems fitting that one of the nicest weathered weekends we have had all summer happens to be the day for Robyn and Dean's beach themed wedding. This four tier creation consisting of vanilla bean cake brushed with lemon curd complimented with raspberry butter cream. For this design we kept the color palette simple with turquoise , white shells and waves and silver accents. The bucket of shells topped it off with a the couples monogram.

Simply timeless, when it comes to cream shades on white for wedding cakes. This is definately the type of cake you can look back on and still love it's sophistication. I do enjoy playing with heights of the tiers to give a suttle but different silhouette to the cake. It isn't a surprise that hydrangeas are still a popular flower with weddings and event. These small sugar flowers excel in striking decor of this wedding cake.
This two tier creation is a great example of how smaller wedding cakes only serving a couple dozen people guests can still be a show stopper. When it comes to small wedding cake I usually recommend a cake stand so it stands at the height seen across the room. This design was based a smaller, color and shape modified version of a past cake done for a The Cake Show. Normally I wouldn't repeat a design , but the first version wasn't for a client so the design was up for the first couple who enjoy it and wanted it for their day. Which was a pleasure for me , with this being one of my favourite past cake concepts. A great way to end the last weekend of August and look forward September's events.

What can I say , this wedding cake is ultra girly, but I love it. This cake has traditional elements to it with white fondant and piping but with modern stylings. The bottom tier was completely covered in fondant pleats and pearls. It was important to incorporate the fuchsia color into the cake without it being too much. As much as I love color , I find completely covering a cake with one bright shade can come off tacky. So a sugar peony and silk ribbon board gave the right touch of color to this dreamy design.

For this season one hot trend in any event's decor is pattern and lots of it. From damask, filigree , stripes to even polka dots, vibrant patterns gives beautiful layers to any room. For the design of this three tier oval , black damask pattern gave dramatic pop on the white fondant with hints of granny smith green. For a topper, centred in usually expected, but instead we went with large feathers off the side on top of fondant ruffles. Over all this design gave just the right touch of modern elegance for this wedding's decor.

Orange and red against white is currently one of my favorite color pairings. This three tier hexagon cake was covered with colorful blossoms and hints of pearls. The fondant monogram help give a personal touch to the cake. The cake it self was a 5 layer Banana cake with baileys genache and Strawberry Buttercream. Which is interesting to cut into with all the colors of each layer.

You might be thinking this cake was made as a birthday cake or even a grooms cake, made second to the wedding cake, but this trophy cake was in fact the wedding cake. The wedding was not entirely dedicated in decor to the NHL, but was in fact a beautifully decorated reception. The Bride felt that the cake should not only be a conversation starter but should be all about the Groom's love for the game of hockey and make it his mark on the reception decor. To make it personal the cake listed each member of the wedding party, their favorite number , and their birthdays. There was even sugar hockey sticks and pucks of the groom's favorite teams. For just a giggle, the bride wanted an autobot symbol to be included. To see if the Tranformers fan of a Groom would notice. This was just another great example about how the wedding cake is no longer about tradition, but about making a statement.

Toronto Cake Show | Wedding Cake Challenge | Wychwood Barns | Bonnie Gordon Cake School

This past weekend I was thrilled to be asked at the last minute to fill in as a competitor for a live cake design competition at The Cake Show held at Wychwood Barns in Toronto. This was a great charitable cause with proceeds going to The Stop Food Community Centre presented by Bonnie Gordon School of Cake design. For this 4 tier cake design, I wanted to create something soft and elegant. After a friend traveling in Paris had sent me a pic of Marie Antoinette's bedroom, the color palette was selected being muted teal, gold, and pale rose. The rest of the design was inspired by the hot trend on the runway , pleats and ruffles. I wanted the design to be somewhat messy by throwing in edible feathers and roses randomly throughout. I have to give a big thanks to my assistant Charmaine Baan , who did a fantastic job helping me finish this design in 4 and a half hours.

This couple was a blast to work with. The bride had her vision of a enchanted style reception. The Reception was held at the Craigleith Ski Club outside Collingwood, which was the first time I had delivered a cake there and was wowed by the venue's tall wood beam ceiling and views of the ski hills. The decor was absolutely beautiful and organic being a enchanted theme. With special touches such as flowers and moss on the cake's table, added to the gorgeous decor. I admire people who have the patience to hand stitch thread to fabric to make something beautiful or cozy. Since I'm not the best at sewing (I'm no a "Martha Stewart" ), this is my tribute to the seamstresses out there. This cake was made for the Blue Mountain Foundation of the Arts located downtown Collingwood. No thread was needed , each stitch was hand painted. With colors such as poppy red and pastel blue , this cake is simply cheerful.

So you've set the date , picked your venue , decided your theme/decor of your day and now it's time to plan the design of your cake. The wedding cake can be the sweet part of your planning , but you should come prepared. It's important to bring any ideas for the cake design that you have in mind. Bring pictures from magazines, books, websites, any place that inspires you. Be sure and bring along color swatches so that your cake designer can match your cake to your wedding colors. Inspiration can be taken from several places , your dress , invitations, linen pattern, flowers , or even a hobby you both share. As well, don't forget to bring your appetite for the cake tasting.

Sugar flowers vs. Fresh Flowers

Sugar flowers are a fabulous creation consisting of an almost porcelain like consistency. Made from a sugar dough known as gumpaste they are edible confections that add such beauty to a cake it is unbelievable. They are hand molded , dried , painted and assembled and take days sometimes weeks to create. With sugar flowers there are no worries about toxic pesticides or if the flowers are naturally poisonous and even better, you can have your favourite flower created no matter the season in any shade desired. The resemblance to fresh flowers are uncanning ,that it's surprising to some that they are not real. Another plus to sugar flowers is that make great keepsakes. As opposed to regular flowers , sugar flowers can last a lifetime in a dry place.

The cakes above are all decorated with sugar flowers. For myself , cake design is an art , and I always use sugar flowers to create wow factor cakes.

This vintage four tier cake design was designed as if it was for Marie Antionette herself. With vintage golden sugar buttons, lady cameos, and large 24 karot gold rose , it's a very regal design. I really believe that the wedding cake should stand out on it's own and not fade into the event's design. So even though a simple and elegant cake is beautiful on it's own, it really doesn't reflect the couple's taste and style by being unrememorable. This cake really shows how being creative with your cake design makes a impact on your special day.

There's something so whimsically childlike about unwrapping a cupcake and so elegant cutting into a tiered masterpiece. This is why it is so hard to decide between the two. If you're having a formal wedding, you may choose a grand and elegant wedding cake. Wedding cakes are best for a formal sit down dinner , where the cake will be plated and served. With overall design possibilities , wedding cakes have more beautiful options to choose from. If your wedding guests are traditional people, they might think cupcakes are too casual, or even worse, cheap.

But if you're having a relaxed reception where fun is the primary goal, tell everyone to be a kid again and grab a cupcake. If your dinner is buffet, heur dourves style or just a celebration with cocktails in hand, then cupcakes are a practical choice. Once everyone is busting a move on the dance floor, they won't have to sit again for dessert. They'll just grab a cupcake and dance the night away.

If after all this you still can't decide between the cuteness of a cupcake and tradition of a wedding cake, just have both. Cupcakes are great addition to dessert buffets and sweet tables, while the wedding cake will be a staple in your receptions decor.

There are several different types of icings for Cakes and Cupcakes , that it's easy to get all mixed up. There's ganaches, glazes , frostings and fondants that can be paired with your confection to add taste or decoration. Here is a few simple definitions that can help in your icing decisions.

FONDANT

Fondant is the popular choice for modern cakes. It is a sugar dough that is rolled and covers the outside of the cake to give a perfect porcelain finish. For design elements the possibilities are endless. It can be colored , painted on , pleated and sculpted to create works of sweet art. Flavors range from Vanilla , Chocolate , and White Chocolate ,however the fondant is only place on the outside of the cake and doesn't make a huge influence on the overall flavor.For wedding cakes and extra special event cakes I strongly recommend fondant be used to give that wow factor your event deserves.

BUTTER CREAM ICING

Butter cream icing is by far one of the most popular types of icings and not just for wedding cakes but also for cakes of all different celebrations. The texture is smooth and creamy and not overly sweet and can flavored endless ways with fruit purees. It is soft and easy to cut and perfect to layer and fill cakes or a simple swirl on top of a cupcake. Genuine butter cream is made with real butter, so cakes iced with butter cream may need to be kept in a cool place. Beware of cheap imitation butter cream icings often made in mass production bakeries. Their version is often made hydrogenated vegetable shortening to replace butter to reduce cost but unfortunately flavor as well. Remember with cake, you get what you pay for when it comes to quality of ingredients and overall flavor, so take the time to ask your baker what ingredients they use with their confections to insure your cake is delicious.

ROYAL ICING

Royal icing is commonly used for piped decoration. Found often sugar cookies and gingerbread houses, it is soft when piped then it dries to a hard finish. This is the icing that is used to create beading, latticework, flowers and other creations that need to remain firm. This icing is used for decoration and not to ice the whole cake.

GANACHES

Mmmm Chocolate! This fancy term is simply good couverture chocolate melted with heavy cream that is often found in the center of chocolate truffles. Liqueurs are commonly added to create not only aroma but delicious flavor. Genache can be used to fill and cover cakes and are excellent on cupcakes. I recommend a good quality chocolate be used for smooth decadent flavor (Callebaut or Lindt works well). Overall a ganache is a great choice for a decadent rich cake.

I find myself constantly thinking how I can recreate anything beautiful or odd into cake. In 2007 I set my sights on Collingwood , Ontario and now creates custom cakes that are intirely unique. I now cater beautiful one of a kind cakes to Toronto, Muskoka, and Collingwood.
